Hide Add to cart in Categories/Summary and include a “Read More” instead

I found this in the forums to remove the Add to Cart button.
.archive a.button.product_type_simple.add_to_cart_button.ajax_add_to_cart {
display: none;
}
Seems to work fine as it does hide the cart button from the category display and not the full product page.
Would like to take it one step further and include a Read More button in the category display much like what
appears when you do not include a price with a product.
Possible??
